Fried Green Tomatoes


Yield:  1 serving


1. Take 3, 1/2 inch slices of green tomato and toss in flour coating each slice thoroughly.

2. Dip each slice in beaten egg; be certain the tomatoes are covered well with egg.

3. Dredge in panko crumb mix and press the crumbs until completely covered in crumb mix. Lay aside until ready to cook.

4. Heat sauté pan with olive oil to high heat or fryer to 350 degrees F.

5. Fry tomatoes to golden brown then place on absorbent cloth to catch excess oil.

6. Arrange tomatoes in center of plate.

7. Cut 3 cherry tomatoes in half. With the 6 halves arrange around the plate in circular pattern.

8. Mix 1oz of green goddess dressing with 1oz (weight) of baby arugula in mixing bowl until well incorporated.

9. Place arugula and goddess dressing mix over the fried green tomatoes freely.

10. Top plate with 2oz of jumbo lump crab meat.

11. Serve



Panko Crumb Mix

Yield: 4 servings



Panko bread crumbs - 2 cups

 1 lemon zested

 Finely chopped parsley- 1 tablespoon

 Shredded pecorino or romano cheese- 1/2 cup


 Mix all ingredients into mixing bowl thoroughly. Set aside for prep.




Green Goddess Dressing

Yield: 4 servings



Anchovies- 2

Garlic- 2 small minced

Parsley- 1/2 cup finely chopped

Basil leaves- 1/2 cup finely chopped

Oregano leaves- 1/4 cup finely chopped

Dill- 1 teaspoon finely chopped

Mayo- 1/2 cup

Lemon juice- 2 tablespoons

Green onions- 1 tablespoon diced

Salt and pepper- to taste


1. Place anchovies, garlic, and herbs into food processor and blend until coarsely chopped.

2. Add  mayo and lemon juice. Pulse until smooth with no clumps.

3. Remove from processor and into mixing bowl.

4. Fold mixture with green onions and salt and pepper.

5. Store until ready to serve.
